The Union members are aware of the value of the exceptional heritage that is constituted by Chablis seven Grands Crus, and of the role that these play in the overall reputation of Chablis. They undertake to make every effort, from the vineyard through to the bottled wine, to produce wines of a quality that will set them amongst the greatest white wines of the world.
This is the spirit under which this charter has been discussed and adopted.
A CHARTER FOR QUALITY
New plantings : Future plantings will be carried out to a minimum density of 8,000 vines per hectare.
Environmental precautions : Conscious of the importance of respecting the environment, Union members will practice "viticulture raisonnée" , which means minimal use of all chemicals.
Yields and limitations :
Fertilisation :This will involve only organic substances and will be used sparingly in order to restrict plant vigour.
Pruning : The numbrer of buds will be restricted to 75,000 per hectare.
De-suckering : This will be carried out in order to limit the potential crop in terms of bunches.
Green harvest :Green harvest will be used if potential crop levels are too high.
Harvest : only manual harvesting will be authorised.
Control in the vineyards : All plots of Chablis Grand Cru belonging to members will be inspected by a commission comprised of Union members during the month of July. This commission will be charged with verifying the health of the vines and bunches and checking probable crop levels. In the event of there being something out of step with the charter, they will inform the member and engage him to rectify the situation.
Traceability : At the very least, both the name of the Grand Cru and its vintage must appear on the cork.
The Control of bottled wines : All Chablis Grand Cru wines produced by members will be tasted "blind" in December following the harvest by a commission including Union members and invited experts from international wine trade. The aim of this tasting panel is to give an opinion on the general level of the wines that that will be sold later on, and to give notification of any sub-standard wines. Those members concerned will then be informed and invited to take the appropriate measures.
The Union des Grands Crus de Chablis logo : All members are entitled to appose the Union'logo on their labels, bottles or other commercial documents.
Selling dates : No wine marketed before the January 1st of the second year following vintage (15 months after harvest) will be allowed to bear the logo of «l'Union des Grands Crus de Chablis ».
All members of l'Union des Grands Crus de Chablis are held to apply all clauses of this charter and thereby volunteer to fully respect it. Any failure to do so may lead to that member being excluded from the Union.
